Approximate cost: £53 for 4 meals (4 portions)

None of these meals are strictly carb free as even vegetables contain some level of carbohydrate, however these 4 dishes do omit the usual suspects; bread, pasta, white rice and potato.

For those of you that are health conscious; I have it on good authority that omitting these bad boys can actually improve acne prone skin and help rid you of those pesky love handles – science fact!

On recent viewing, I’ve realised that this weeks shopping list is a little pork heavy – If you want to avoid this, you can remove the chorizo from the cod dish and chickpea salad dishes and reduce the meat content.

Using the below ingredients to make all 4 meals, you will be left with a few leftovers. I’ve listed these below with links to how you can use them

  • 1 small red onion (17p)
  • 2 large white onions (40p)
  • 2 red chillies (60p for a 60g pack containing approx 4)
  • 6 tomatoes (£1)
  • 3 lemons (90p)
  • a bunch of of mint leaves (70p – even if you have the smallest window sill, you can grow your own mint, it is impossible to kill!)
  • rocket (£1)
  • spinach (£1)

(the majority of the rocket and spinach to be used in the chickpea salad, the remainder with the stuffed peppers)

  • 3 courgettes (90p)
  • 8 fresh sage leaves
  • ½ bunch fresh mint
  • 3 sprigs of rosemary (70p for a packet)
  • 7 cloves of garlic (50p for a bulb)
  • ½ small pack parsley (£1)
  • 4  red peppers (£2)
  • avocado (£1)

  • 200g chorizo – I prefer to use raw, cooking chorizo as this releases a load of tasty juice as you fry it (£2.50) – I would halve this to use in both dishes or use in just 1 (or if you love chorizo, buy 400g and add to both cod and salad recipes)
  • 1 pork fillet, usually weighs around 400g (£4.50)
  • 8 slices of Parma ham or prosciutto (£3 for a packet of 8)
  • 4 cod fillets (£15)
  • 350g minced pork (£3 for 454g British Free Range pork mince)

  • feta (£1.80 for 200g)
  • yoghurt or soured cream, to serve (55p for a small pot)
  • bread roll for breadcrumbs (50p)
  • a handful of grated Parmesan (£2.30 for 150g of Parmigiano Reggiano)

  • 1 can of chickpeas (55p)
  • 1/2 jar sun-dried tomatoes (£2 for a jar)
  • brown rice, 280g (£1.50 for a 1kg bag)
  • balsamic  glaze (optional)
  • 400g can chopped tomatoes (£1)
  • 400g can of butter beans, drained (50p)
  • 1 jar of roasted red peppers (£2.50) OR buy 4 more red peppers (Nour in Brixton sell them in packs of 4 for less than £1) and roast them yourself.
