If asked, I will say that pancake batter is best made the day before, and if if pressed, I’ll admin that I’ve never actually bothered to find out why… maybe it’s to allow you to come home after work and have a pancake in your gob in under 5 minutes, which seems sensible to me. 

(You may have noticed that I made these ahead of pancake day – I am slightly concerned that I confused Valentine’s Day and Pancake Day this year, but if my early onset senility means a groundhog day of pancakes, then I’m actually okay with this) 

For this recipe (and others in the “5 ways” article), start with a basic pancakes recipe:


To prepare:

Sieve 125g plain flour into a large mixing bowl. Make a well in the centre and crack in 1 egg. Measure out 300ml of milk but only add a little to the flour and egg mixture to start and whisk. Continue adding the milk gradually whilst whisking to ensure that the batter has no lumps.  Cover and leave in the fridge overnight. (Don’t ask why, just do as you’re told)


To cook:

Start by cooking your pancakes…. when each one is finished, lay it on a wooden chopping board, cover with a layer of kitchen towel and prepare the next. Stack them up until you’re ready to eat. 

Melt 100g white chocolate with 1 tsp coconut oil in a bowl set over a pan of simmering water, or in the microwave. Push the flesh of 4 passion fruits through a sieve, using the back of a spoon to extract as much juice and pulp as possible. Drizzle the juice over the top of 4 folded pancakes, then drizzle over the white chocolate sauce.

  • 100g white chocolate (£2 for the fancy variety)
  • 1 tsp coconut oil (£3.95 for a jar)
  • 3  passion fruits (£1.25 for a pack of 3)
